150 grams digestive biscuits, crushed to a fine powder
65 grams melted butter
✅For the Cheesecake Batter:
75 grams white chocolate, melted
265 grams cream cheese, room temperature
50 grams sour cream, room temperature
80 grams caster sugar
1 teaspoon vanilla extract
160 grams whipping cream, chilled
✅For the (optional) Strawberry topping:
130 grams chopped strawberries
65 grams caster sugar
180 grams water
✅Notes:
1. To make the strawberry topping, add the chopped strawberries, caster sugar and water in a saucepan. Bring to a boil first, then simmer for 10 minutes on medium heat. Transfer to a bowl, cool to room temp then refrigerate till needed.
2. Make sure all your cheesecake ingredients are at room temperature except the whipping cream, which needs to be chilled.
