Hello Friends! Eating red beans and rice is a tradition in the south especially New Orleans and Texas tends to adopt a lot of the traditions from New Orleans. I cooked the red beans in a crockpot so that I could free up some time and finish up my holiday shopping I hope you enjoy this recipe. It’s a staple that I grew up on with my mom it’s affordable and it’s perfect for leftovers a pot generally feeds a family of four for a lease two maybe three days. Let me know.  Monday’s Crockpot Red Beans n Rice

2 lbs Camelia Red Kidney Beans
4 cups water
4 cups low sodium chicken broth
1/4 yellow onion, diced
1/4 green bell pepper,diced
3 stems green onions, chopped
1/2 tbs Cajun seasonings (Your choice)
2 tsps garlic powder
1 tsp onion powder
1/2 tsp ground black pepper
1/4tsp Cayenne Pepper
1 tsp chili powder
2-3 bay leaves
1 tsp thyme
2 tsps all purpose seasoning
1/4 tsp white pepper
2 tsps Worchestire Sauce
1 tbs unsalted butter
1 lb of andouille sausage
1/2 tbs hot sauce
2 tbs cornstarch (optional)
1/4 cup water
