Описание к видео I Make Chicken Parm (Without Parmesan)

In this video, I show you how to make the perfect chicken parmesan!

INGREDIENTS:

(SERVES 3 PEOPLE OR 3 CHICKEN PARMESAN PIECES)

CHICKEN:

Chicken breasts (3)
Salt (1 tsp)
Pepper (1 tsp)
Flour (2 tbsp)
Egg (1)
Bread crumbs (1 cup)
Oil (for frying)

SAUCE:

Onions (1/2)
Garlic (4 cloves)
Oil (1 tbsp)
Tomato puree ( 4 tbsp)
Chicken stock (1 cup)
OR
Stock cube (1)
Cream (3 tbsp)
Salt (to taste)
Pepper (to taste)
Butter (2 tbsp)
Oregano (2 tsp)

TOPPINGS:

Instant yeast (COOKED WELL UNTIL DEAD)
Mozzarella cheese (6 slices)
Oregano (1/2 tsp)


DIRECTIONS:

CHICKEN:

1. Take your chicken pieces and pound them out with a meat mallet to ensure they're all the same thickness.
2. Season both sides with salt and pepper.
3. Add your flour to the chicken and press in with your hands and move around until all sides of the chicken are well covered.
4. Add a beaten egg to a separate plate and dip your floured chicken in the mixture.
5. In a separate plate add a layer of breadcrumbs and lay your egged and floured chicken onto it. Use your other hand to sprinkle breadcrumbs over the chicken and apply pressure to make sure they stick reliably. Repeat for all the pieces.
6. Heat an inch of oil in a pan and only add your chicken to the oil when it sizzles when in contact.
7. Fry your chicken for 2-3 minutes on each side or until the color is a beautiful golden brown and then remove from the oil.

SAUCE:

1. Roughly dice your onion and chop your garlic.
2. Add your onion to your pan and cook for 1 minute.
3. Then add your garlic and cook for another 30 seconds while stirring constantly.
4. Add your tomato puree and your stock and increase the heat to high.
5. Reduce this mixture till your spoon or spatula leaves a trail when scraping the bottom of the pan.
6. Lower the heat and add your cream.
7. Mix well and season to taste with salt and pepper.
8. Transfer this sauce to a blender and blend until smooth (OPTIONAL)
9. Add back into the pan and go in with your butter and oregano.

ASSEMBLY:

1. Place your fried chicken on a baking tray and spoon over some of your sauce.
2. Add 2 slices of mozzarella cheese to each chicken piece and place under your broiler for around 3 minutes or until the cheese is nice and melted.
3. Remove from the oven, spoon over more sauce, add your parmesan cheese or nutritional yeast and finish with some oregano. SERVE IMMEDIATELY.
