🌨️❄️☃️These are the slow days of winter while the world is hushed with a thick blanket of snow. The nursery school poem says it with so much charm-
❄️Snow makes whiteness where it falls,❄️
❄️The bushes look like popcorn balls,❄️
❄️And places where I always play,❄️
❄️Look like somewhere else today.❄️
I hope you have a cozy day wherever you are and that you can make these cornmeal pancakes and a good pot of tea. I hope that you can eat them with someone you love and remember that simple things shared together; are such a joy.

❄️The Cornmeal Pancakes❄️

1 cup cornmeal
1 teaspoon salt
1 cup boiling water
2 tablespoon butter, room temp
1 cup buttermilk
3/4 cup flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
butter for frying

-In medium bowl combine the salt and cornmeal. Slowly stir in boiling water and then put butter on top of hot mixture and cover with a lid. Let sit for 15 minutes.
-Add the remaining ingredients and stir well with a whisk.
-Using about 1/4 cup per pancake fry on hot skillet that has been well greased. When small bubbles appear on top flip pancake and brown the other side.
-Serve warm with maple syrup.
