Burmese Tomato Curry Recipe

This is a classic Burmese side dish that is eaten in all Burmese homes as a condiment or as an accompanying dish. This dish is spicy and uses a combination of tomatoes, shrimp paste and onions and is called Khayan chinthi chet in Burmese (ခရမ္းခ်ဥ္သီးငပိခ်က္). Yet you will not find it being sold in any restaurants because it is considered too simple, which is a shame because it is delicious and comforting. As a note, this recipe is made using ngapi, a ubiquitous ingredient in Myanmar cuisine. Ngapi is an ingredient made with fermented fish or prawns, and has a pungent smell, so be sure to have your kitchen windows open when making this dish.
