MANGO ICE CREAM
500 g Milk 113 g Sugar 50 ml Cream 48 g Milk powder 6 g Vanilla extract 2 g Salt 1 cup Mango purée (strained) Diced mango & crushed biscuits
Method: Whisk all ingredients except mango and biscuits. Heat to 80 °C, chill over ice. Freeze container 24h. Churn, fold in mango & biscuits, freeze until set. Scoop & serve.
AAM LEATHER
3 Mangoes 3–4 tbsp Water 1 tsp Salt 1 tsp Amchur powder 1 tsp Jeera powder 1 tsp Red chili powder 1 tsp Chaat masala
Method: Purée mango and water. Mix in spices. Spread on silicone mat. Dry at 100 °C for 3 hrs. Peel, cut into strips.
MANGO BOBA
1½ Mango
2 tbsp Sugar
3 tbsp Water
¼ + ¾ cup Tapioca flour
Few drops food colour (optional)
Honey, Ice cubes
Milk (optional)
Method: Purée mango with sugar and water. Use ¼ cup mix with ¼ cup tapioca flour. Microwave till thick. Add food colour, rest of flour, knead, roll, cut pearls. Boil ~15 min. Ice bath. Coat with honey. Serve with milk, ice, mango.
MANGO COCONUT CURRY
4 Mangoes
2 tbsp Ghee
1 tsp Cumin & Mustard Seeds
Spices
1 cup Coconut Milk
Lemon Juice
Curry Leaves
Salt
Method: Blend mangoes, keep pips. Heat ghee, splutter seeds. Coat pips with spices. Stir in pulp, cook. Add water, simmer. Add coconut milk. Finish with lemon juice & curry leaf tempering.
MANGO JELLY
200 g Mango
3 tbsp Sugar
2 g Agar agar
Chili powder
Salt
Method: Blend all. Cook till thick. Add salt, pour into greased tray, let it set. Cut and serve.
MANGO KETCHUP
2 Langra Mangoes
1 Raw Mango
1 Onion
4 Garlic Cloves
1/2 inch Ginger
2 Green Chillies
10 ml Oil Bay Leaf
Cloves
Cinnamon
Peppercorns
2 tbsp Brown Sugar
Salt
Water
Coriander
Mint
1 tbsp Vinegar
Method: Cook mango mix with spices. Add sugar & herbs, simmer. Blend, strain, reduce. Stir in vinegar. Bottle & chill.
MANGO MAGNUM
Ice cream: 2 Mangoes, ½ cup Greek yogurt, 2 tbsp Milk, 1 tbsp Honey Shell: 1 cup
White compound, 1½ tsp Sunflower oil, Roasted Pistachios
Method: Blend mango mix, pour into molds. Freeze 8+ hours. Dip in chocolate shell. Freeze again.
MANGO SALSA
2 Ripe Mangoes
1 Onion
1 Tomato
1 Jalapeño
1 Raw Mango
Coriander
2 tsp Red Chilli Sauce
1 tbsp Butter
Salt
Lemon Juice
Crushed Pepper
Method: Char mango in butter. Crush and mix with veggies and spices. Serve with tacos or chips.
MANGO CLOUD CHAAT
1 cup Mango Pulp
1/2 cup Greek Yogurt
1/4 cup Cream
1 tbsp Sugar
1/2 tsp each: Red Chilli, Chaat Masala, Amchur, Ginger Juice
1/4 tsp each: Black Pepper, Black Salt
Salt to taste
Garnish: 2 tbsp Raw mango, Pomegranate, Sev, 1 tsp Bhuna jeera, Crushed papdi
Method: Blend ingredients, strain, load into siphon, refrigerate. Pipe into glasses. Garnish.
DOUBLE MANGO PANIPURI
3 cups Ripe Mangoes
1½ cups Raw Mango
Mint & Coriander Leaves
2 Green Chillies
1-inch Ginger
3 tbsp Sugar Water
Ice Cubes
Spices
Black Salt
Salt
Pani Puri Shells
Boondi
Method: Blend mango, herbs, and water. Add spices in a jug, dilute and chill. Serve with puris filled with boondi and mango chunks.
MANGO SUSHI
Rice: 2 cups Sushi rice, 2½ cups Water
Vinegar Mix: Sushi vinegar, sugar, salt Filling: Nori Sheet, Mango, Cream Cheese, Cucumber, Spicy Furikake
Method: Cook and season rice. Spread on nori. Add fillings, roll tightly. Slice and serve chilled.
MANGO KULFI
3 Mangoes
½ cup Rabdi or condensed milk
3 Bread slices
1 cup Whole milk
¼ cup Sugar Chopped Pistachios
Method: Hollow mangoes, reserve flesh. Blend with other ingredients. Pour into mango shells. Freeze overnight. Peel, slice, garnish.
MANGO SALAD
Dressing: Mango (ripe & raw), Jalapeno, Garlic, Salt, Sugar, Olive oil, Water Salad: Avocado, Corn, Tomato, Peppers, Zucchini, Raw mango, Lettuce, Peanuts
Method: Blend dressing. Toss salad ingredients. Add lettuce & dressing. Garnish with peanuts.
MANGO MILKSHAKE
2 Mangoes
60g Condensed milk
Frozen milk cubes
Ice cubes
Extra milk, as required
Diced mangoes, for garnish
Method: Blend all ingredients until thick and creamy. Pour into glass. Garnish with whipped cream and mango chunks.
