Back with one of my favourite protein packed snacks - with added pizzazz!

Everyone has their own favourite recipe for hummus. I’ve eaten hummus in many different countries and each version has been slightly different. This is my recipe for rustling up a hasty batch when unexpected visitors require sustenance, or when supper is taking too long to prepare and people are becoming hangry.

Once you’ve made hummus at home, you will never been able to enjoy the store bought version ever again.

Here’s the basic recipe, customise it to suit your tastebuds. If you prefer a spreadable hummus, use 2 cups of chickpeas, but I prefer mine dreamy and creamy and smooth.

1 cup cooked chickpeas plus a little of the water (approx 1 tablespoon)
Third cup of raw beetroot.
1 generous pinch of sea salt.
1 teaspoon of cumin.
1 tablespoon tahini
Juice of 1 lemon
1 or 2 garlic cloves.

Blend until smooth.

It will be a bit runny until it’s been refrigerated, so don’t panic!

Slather on roasted veggies, bagels, toast or enjoy straight off the spoon.

It tastes as good as it looks.
