This is such an easy salad to make. It's filling and it doesn't heat up your house.

SUMMER COUSCOUS SALAD:

First, make the couscous:
Add 1 cup of couscous into a bowl and pour boiling water over it until it is just submerged (read the instructions on the package of couscous). Cover with a lid or a plate and set aside.

In the meantime, into a large bowl add:
Drain and rinse one can of chickpeas.
Dice & add whatever veggies you like such as: red pepper, red or green onion, tomatoes, corn, carrots, dill pickles, sun-dried tomatoes, pickled asparagus, olives, etc.

Add 1 tsp of your seasoning blend of choice. I used garlic and herb but italian, zatar, or any other herb blend works.

Fluff the couscous and add to the bowl.

Add 1/2 to 1 cup of your favourite vinaigrette and stir so it's all coated and add salt and pepper to taste.

Refrigerate for a couple of hours or overnight to let the flavours meld.
