Sparkling Water Easy Börek Recipe:

1. Prepare the Filling:

1. Boil 6 medium-sized potatoes. You can either chop and wash the potatoes, then put them in a pot with some salt and boil, or you can wash them, leave the skins on, and boil them with a pinch of salt.
2. After boiling, drain the water and let the potatoes cool slightly. Then, peel the potatoes.
3. Mash the potatoes with a fork or a potato masher.
4. Add salt to taste (I used 1 teaspoon), 1 teaspoon of red pepper powder, and 1 teaspoon of black pepper. Mix well.
5. Sauté the potato mixture in 2 tablespoons of vegetable oil or olive oil for 3-5 minutes until everything is well combined, then remove from heat.

2. Make the Yufka Sauce:

1. In a bowl, mix half a tea glass of vegetable oil or olive oil with half a tablespoon of butter.
2. Add half a bottle of sparkling water to the bowl and stir well. (This mixture will make your börek extra crispy, even after freezing and reheating.)

3. Prepare the Börek:

1. Take one sheet of yufka and spread the sauce over half of it.
2. Fold the other half over the oiled side, then unfold it again.
3. Repeat this process with 5 sheets of yufka, stacking them on top of each other. Both sides of each yufka will be coated with sauce.
4. Cut the yufka in half, then continue cutting into smaller pieces. From 5 yufka sheets, you can get around 31 börek pieces.
5. Take one cut yufka piece, place a spoonful of the filling on the larger part, fold, and roll it up like a cigarette börek, but don’t roll it too tightly.

4. Baking the Börek:

1. Arrange the böreks on a baking tray.
2. Brush the remaining sparkling water mixture over the top of the böreks.
3. Brush the tops with egg yolk.
4. Sprinkle with sesame seeds or nigella seeds, or both, as desired.
5. Bake in a preheated oven at 150°C (300°F) until golden brown.
6. Remove from the oven and let cool slightly before serving.
