This video is going to demonstrate how to make an easy, yet delicious Philly Roast Pork sub. Recipe below:

Ingredients:
3 LB Pork Butt
Dried Rosemary, Thyme, Oregano
Ground Fennel
Crushed Pepper
1 Large Onion, sliced in half and tunic removed
3 Celery Stalks chopped
1 Carrot chopped
1.5 Cups Dry White Wine
1 Quart Chicken Stock
Broccoli Raab
Garlic
Sharp Provolone
Italian Bread

Preheat Oven to 275 Degrees. Meanwhile, Season Pork on all sides with Salt, Pepper, Dried Herbs, Ground Fennel and Crushed Pepper. Put dutch oven on stove top over medium high heat, pour in olive oil and sear pork on each side for 3-5 minutes, enough to get herbs fragrant, but not burnt. Remove pork and add onion face down, celery and carrot - carmelize for 5 minutes. Add sliced garlic for 2 minutes or fragrant. Deglaze with wine, add chicken broth, add pork which should be covered 2/3 of way. Place in oven for 3.5 hours or until tender enough to shred.

Remove pork and let rest for 10 minutes. Strain liquid into separate pot. While pork is resting, place pan on stove over medium high heat. Add olive oil and brown garlic and crushed pepper. Add broccoli raab and 1 cup chicken broth. Cover and cook for 7-8 minutes. After pork has rested, shred and add 3 ladle scoops of leftover sauce previously strained. Assemble sandwich with Sharp Provolone, Shredded Pork, Broccoli raab and Cherry peppers. Manga!
