Whether you're an experienced baker or a curious novice, this recipe will guide you to create a loaf that's both nostalgic and delightful.

Ingredients

1 3/4 cups of rye flour
2 ½ cups all-purpose flour
¾ cup whole wheat flour
2 1/4 teaspoons active dry yeast
1 3/4 cups warm water (100°F)
3 tablespoons molasses
3 tablespoons caraway seeds
1 tablespoon salt
2 tablespoons of canola oil
¼ cup brown sugar

Instructions

In a large stand mixing bowl, dissolve the yeast in ¼ cup of warm water. Stir in the molasses, brown sugar, caraway seeds, oil, salt, and the remaining water. Add the rye flour, whole wheat flour, and 1 cup of the remaining all-purpose flour and knead on medium speed until the mixture is smooth. Stir in the remaining all-purpose flour and knead until it forms a firm dough.

Place the kneaded dough into a lightly greased bowl. Cover it with a clean kitchen towel or plastic wrap. Allow the dough to rise in a warm, draft-free area for about 1 to 1.5 hours, or until it has doubled in size.

After the first rise, gently punch down the dough to release any air bubbles. Transfer the dough back onto a floured surface, cut into two pieces, and shape into two round loaves. Place the shaped dough onto a baking sheet lined with parchment paper.

Cover the loaf with a towel or plastic wrap and let it rise again for another 45 minutes to an hour, or until it has doubled in size.

Preheat your oven to 350°F. Once the loaf has finished its second rise, place in the preheated oven.

Bake for 35-40 minutes, or until the bread sounds hollow when tapped on the bottom and has a deep, golden-brown color.

Remove the bread from the oven and let it cool in the pan for about 10 minutes. Transfer it to a wire rack to cool completely before slicing. Enjoy your homemade rye bread with your favorite toppings or as a side to your meal.
