Imagine it's Friday. You've wrapped up work and decide to drive from Milan to Siena – a journey emitting almost 35kg of CO2. Now, imagine ordering 1kg of steak at dinner; it produces the same amount. A vegetarian diet, on the other hand, generates only 3.8kg of CO2 per day. It’s not just about CO2 savings, though – balanced nutrition is key. A healthy plate includes 50% vegetables, 25% grains and 25% protein. At Bocconi dining halls, we offer a variety of dishes with this balance in mind, including; six cooked side dishes, four raw options, three types of seasonal fruits, and low-sugar, low-fat desserts. To work, study or play sports, we all need energy that comes from vitamins, minerals, proteins, carbohydrates and fats. More healthy choices mean more nutrients, leading to more ideas.

However, there's more to food than just eating – waste is another major concern. Whether you call it compost or humus, the food system alone is responsible for one-third of total anthropogenic greenhouse gas emissions. Small actions such as meal planning, properly storing food and correct recycling can reduce waste. Numbers can help us understand the issue better. For instance, one ton of putrescibile waste sent for composting can lead to -17kg of CO2 due to carbon sink effect in soil, -18kg of CO2 due to the effect of not using fertilizers and -29kg of CO2 by replacing peat with compost.

Eating is wonderful, but doing so mindfully and avoiding waste is even better. If you’re all about sustainability and think about greenhouse gas emissions every time you fly somewhere, remember that 8-10% of these emissions come from food waste. Aviation alone emits five times less. By making small changes in how we manage food and energy, we can shape a sustainable future. After all, an action is worth a thousand words.
