Mtr masala rava idli mix instructions:

Step 1: Prepare the Batter

Empty the instant mix into a large mixing bowl.
The mix already has mustard seeds, curry leaves, chana dal, salt, and spices.
Add 3 cups (750 g) of curd. Using slightly sour curd will enhance the flavor.
Add a handful of finely chopped coriander leaves and whisk everything well.

The rava will quickly soak up the yogurt, giving you a smooth, thick batter. Let it rest for 1–2 minutes.
If needed, add 1 tablespoon of curd to adjust the consistency.

Step 2: Prepare the Idli Stand

Add water to your idli steamer or Instant Pot and turn on the heat.
Grease the idli plates lightly with oil—this helps in easy unmolding.
If you have cashews, place one in each mold before pouring the batter.
Fill the molds with batter, leaving a little space for the idlis to rise.

Step 3: Steam the Idlis

Place the stand in the steamer. Ensure the water doesn’t touch the plates.
Cover with a lid that has a small vent for steam to escape.
Steam for 10 minutes

To check doneness, insert a toothpick or knife—if it comes out clean, the idlis are ready.

Step 4: Serve & Enjoy

Remove the plates and allow the idlis to cool slightly.
Use a spoon to gently unmold them.
Serve warm with coconut-coriander chutney and sambar or enjoy with any dip of your choice.
