Quick Healthy Breakfast Tomato Poha | ( Flattened Rice )

Recipe :
Ingredients :
Poha - 2 cups
Onion - 1
Tomatoes - 2
Green Chillies - 2
Garlic - 2 cloves
Curry leaves
Mustard seeds - 1 tsp
Coriander powder - 1/2 tsp
Kashmiri Chilli Powder - 1 tsp
Salt, Oil
Procedure :
1. Rinse poha and drain the water keep aside.
2. In a pan, add oil , mustard seeds, curry leaves, green chillies, garlic and saute for 30 seconds or just mustard seeds pop up.
3. Add chopped onion pieces and saute them till they turn light brown or translucent .
4. Now add tomato pieces and cook till they turn mushy ( it takes 3 to 5 minutes ) Keep stirring in between,
5. when tomatoes turn mushy add poha and salt mix well and reduce heat to low , cove with llid and cook for 10 minutes.
6. Open the lid and add coriander leaves.
7. Add lemon before serving ( Optional )
