AKBARI CUTLETS
Ingredients
Mince ½ kg
Ginger garlic 1 tbsp
Raw onion grinds 2 tbsp
Bread sliced soaked 1 large
Salt 1 tsp
Chili powder 1 tsp

Green chilies grind 4
Allspice 1 tsp
Green cardamom grind ¼ tsp
Coconut ground 1 tbsp
Almonds powder 2 tbsp
Crushed cumin ½ tsp
Egg 1
Coal for dum
Oil for shallow fry
METHOD
Put all in food processor, ground till smooth, make into cutlets shape, give dum of coal, pan fry, and serve with any sauce or chutney.
MEXICAN ENCHILADAS
Ingredients
Mince 300 gm
Capsicum chopped in tiny cubes½
Salt 1 tsp
Ketchup 4 tbsp
Grated cheddar cheese 1 cup
Green chilies chopped 4
Oil ¼ cup
Crushed red pepper 1 tsp
Hot sauce 2 tbsp
Onion finely chopped 1
Tomato finely chopped 1
Garlic 1 tsp
Sour cream 3 tbsp
Readymade tortillas 6
Ingredients for Sauce
Onion small chopped 1
Garlic 1 tsp
Hot sauce 1 tbsp
Thyme ½ tsp
Capsicum tiny chopped ½
Tomato paste ½ cup
Crushed red pepper 1 tsp
Crushed coriander 1 tsp
Oil ¼ cup
Ketchup ¼ cup
Oregano 1 tsp
Roasted & crushed cumin ½ tsp
METHOD FOR MINCE
Heat oil fry garlic, add chopped onion and green chilies, do not brown, add mince with all the seasonings, chopped tomatoes, fry well, add capsicum, cover and cook for 10 mins, remove and add ketchup and hot sauce.
METHOD FOR SAUCE
Heat oil, add onion and garlic with all the rest, cook till thick, remove.
TO ASSEMBLE
Split tortillas, spoon filling in them, roll, in an open proof dish spread half sauce, put tortillas, top with sauce, cheese, drizzle with sour cream, cover with foil, bake for 15 mins till cheese melts, serve hot.
