HALWASAN

INGREDIENTS:
FOR SHALLOW FRYING GUNDAR:
• 4 tbsp ghee
• ¼ cup gundar (edible gum)

FOR ROASTING BROKEN WHEAT:
• 1 tbsp ghee
• ¼ cup broken wheat (gheu na fada/ daliya)

FOR HALWASAN
• 500 ml milk
• Shallow fried gundar
• ½ cup sugar
• 2 tbsp dry fruits (chopped)
• 1 tbsp cardamon powder
• 1 tsp nutmeg (crush)

METHOD:
FOR SHALLOW FRYING GUNDAR:
• Set a pan on medium heat, add ghee and gundar. Saute it till gundar puffs up.
• Transfer the roasted gundar in a plate.

FOR ROASTING BROKEN WHEAT:
• Set a pan on medium heat, add ghee and broken wheat, roast it well.

FOR HALWASAN:
• Add milk to the roasted broken wheat, add fried gundar.
• Further take other pan add sugar and let it caramelize.
• Add the caramelize sugar to the milk mixture and mix it well.
• Further add chopped dry fruits, cardamon powder, nutmeg powder.
• Transfer the mixture to a plate and let it cool down on room temperature.
• Further, make balls as shown in video garnish it with almonds and serve.
