Udupi Potato Fry Recipe:
Potato - 4 Large
Coconut - 1 Cup (Grated)
Shallots - 20 nos
Ginger - 1 inch
Garlic - 5 nos
Fennel Seeds - 1 tsp
Pepper - 1 tsp
Cumin - 1 tsp
Green Chilli - 2 nos
Curry Leaves - 2 sprigs+ 1 sprig
Salt - 1 tsp+ ½ tsp
Oil - For Frying + 2 tbsp+ 1 tbsp


Cooking Instructions:


1. Cut the potato into cubes and cook until they’re fork tender ( around 5 minutes )
2. Drain the potatoes and pat dry, deep fry until golden brown and set aside
3. In a kadhai add oil and let it heat up, add coconut, shallots, garlic, ginger, fennel seeds, pepper, curry leaves and cumin seeds
4. Saute until the shallots are cooked and the coconut turns golden
5. Blend the mixture into a coarse mixture and set it aside
6. In the same kadhai add oil, green chillies and curry leaves, add back the paste and cook for 30 seconds
7. Add the deep fried potatoes and give it a good mixture and check for salt and add if necessary
