2 TBS Butter
1 Medium Onion, Minced
1 8oz Tomato Sauce
1 4oz Can Green Chili Peppers, Chopped
1/2 TSP Salt
2 Eggs, Beaten
1 Cup Half & Half
1 11oz Pkg Corn Chips
1/2 LB Monterey Jack Cheese, cubed
1 Cup Sour Cream
1/2 Cup Cheddar Cheese, Shredded
Heat oven to 350. Heat butter in skillet. Add onion, saute until soft. Stir in tomato sauce and chili peppers and salt. Simmer 5 minutes, remove from heat. Beat eggs with half & half, stir into tomato sauce. Grease 1 1/2 qt casserole dish. Layer 1/2 chips, sauce and jack cheese in that order and repeat with remaining halves. Spoon over sour cream then cheddar, sprinkle with dash paprika. Bake 30 minutes.
