The first instalment of this commemorative series
is the legendary dark beer
'Yebisu Stout Creamy Top'

'Yebisu Stout Creamy Top'
Japanese-made black beer
was manufactured by Sapporo Breweries, Ltd.,
one of Japan's leading brewing companies,
but production has now ceased.

Characterised by its mellow flavour
accompanied by a fine, creamy foam.
Sales commenced with the commercial market-exclusive
keg-on-tap (10 litres).

Well now,
Do you enjoy dark beer?
I absolutely adore it.

My absolute favourite
is the one I often drank
at the Yebisu Beer Hall.


Stout
'Yebisu Stout Creamy Top' 

Beneath a mousse-like foam, fine, fluffy and creamy,
lies a beer of deep, dark chocolate black—
utterly unforgettable.

At the beer hall, we first
toasted with Yebisu beer,
after which
everything we drank
was “Yebisu Stout Creamy Top”
black beer.

Mellow richness, soft aftertaste
A moment of pure bli

“Yebisu Stout Creamy Top”
was developed by Sapporo Breweries
as a substitute for Guinness,
and launched exclusively for commercial keg sales from 3 July 2009.

From 5 September 2012
320ml cans
are available in limited quantities

Compared to draught beer, the canned version
seemed slightly weaker in flavour
and struggled to replicate the creamy head.

Alas,
both are now
discontinued...


Well,
I've gone on rather long with my preamble.


The challenge:
Recreating the legendary dark beer
“Yebisu Stout Creamy Top”

Using ”Guinness” cans
and “Yebisu Premium Black” cans,
I recreated
“Yebisu Stout Creamy Top”
and it was a resounding success.

Beneath a mousse-like layer of fine bubbles
Lies a deep black like dark chocolate
A mellow richness,
A soft aftertaste
A moment of pure bliss

I must say,
I've managed to get quite close to the flavour of
“Yebisu Stout Creamy Top”, so
I'll write down the recipe.

Do give it a try.

Recreating the Legendary Dark Beer
“Yebisu Stout Creamy Top”
Channel Original Recipe
----------------------------
<Ingredients>
・“Guinness draught beer”: 1 x 330ml can
・“Yebisu Premium Black”: 1/4 to 1/3 of a 350ml can
     (Adjust to taste whilst sampling)
  ※1. Chill the beers in the refrigerator for at least 3 hours
・Glass: 500ml capacity
     (A room-temperature glass, air-dried)

<Pouring Method>
1. Pour “Guinness draught beer” into a glass
👉 Open the “Guinness draught beer” 330ml can
 Place the glass over the top of the can,
 then invert it so the can is upside down
 and keep the can about 1-2cm above the beer surface while pouring

Inside a can of “Guinness draught beer”(can)
is a “floating widget” (a white sphere)
which is pre-installed to release nitrogen gas into the beer within the can.

Drawing patterns in the sand dunes,
They cascade downwards like a waterfall,
This is known as the cascade phenomenon.

The crucial waiting period before savouring delicious beer
These are known as 'surging'


What matters most
is to wait patiently
while enjoying the tiny waterfall patterns that appear the moment it's poured.

After enjoying
the “119.5-second cascade show”
in the glass,
once the contents have settled,

2. Gradually add “Yebisu Premium Black” 350ml cans
to adjust the beer to your preferred taste.

👉 Yebisu Premium Black 350ml can
First, pour in 1/4 to (adjust to taste while sampling)
gently.

👉 Pour gently to avoid disturbing the creamy, beautiful foam.
