Chocolate Chip Walnut Cookies

It’s hard to beat a good chocolate chip cookie. Ooey, gooey, chocolate vessel of love. This cookie is a traditional classic but following the base recipe allows it to transform to your liking. While I love walnuts, you can easily switch up the nut to your preferred choice or omit and add more chocolate. The chocolate chips can be switched up to white chocolate. Play around and have some fun! There are so many options! Want one big cookie cake? Spread this cookie dough out in a skillet for a large cookie treat.

Yield: 1 dozen cookies

Ingredients
• 1/2 cup butter, at room temperature
• 1/2 cup light brown sugar
• 1/3 cup sugar
• 1 egg
• 1 1/2 teaspoon vanilla extract
• 1 1/2 cups 1.1 GF Flour
• 2 teaspoon arrowroot powder or cornstarch
• 1 teaspoon baking soda
• 1 cup semi-sweet chocolate chips
• 1 cup bittersweet chocolate chips
• 1 cup of chopped walnuts


In your mixing bowl with a whisk attachment add both sugars and butter. Turn your mixer on medium/high with the paddle attachment and mix for 5 minutes or until light and little fluffy. Switch your mixer on low and add the egg and vanilla to the bowl. Mix until incorporated. Turn your mixer off and scrape the sides to ensure everything is in the bottom of the bowl. In a separate medium sized mixing bowl, sift all the dry ingredients together and add to your KitchenAid mixing bowl. When adding the dry ingredients, add them slowly on medium speed and mix until combined. We don’t want to overmix. Now it is time to add the chocolates and walnuts. Gently fold into the cookie dough. Once mixed in, put your cookie dough in the refrigerator for at least 6 hours minimum. When it’s time to bake, Preheat the oven to 350 degrees and line 2 baking sheets with parchment paper. Using an ice cream scoop, scoop 1 1/2" scoops, equal in size to ensure even baking. Bake your cookies for 10-13 minutes on your middle rack in your oven. Cookies should be lightly golden brown. Allow your cookies to cool completely on your baking sheet prior to moving.
Baking Tips

If time permits allow your dough to chill for 24 hours in the refrigerator. Chilled dough bakes the best. Depending how you like your cookie will determine your baking minutes. The 10-minute mark the outside will be slightly crispy, and the inside will be gooey. The longer you bake it the more it will crisp.
