Organic curves and shapes can be accurately represented with a spline, but splines can be difficult to fully define and constrain fully. The Fit Spline command can create a best-fit spline that follows standard geometry (lines, arcs, and other splines) and gives you a continuous curve suitable for building part geometry. Fit spline can be used in 2D and 3D sketches to smooth out discontinuities and create a single continuous edge or face.
