Ingredients
Half KG HYDERABADI YAKHNI PLOV RECIPE
For the Yakhni broth
500 grams of mutton or chicken
cut into pieces
1 large onion, sliced
2-3 cloves of garlic, smashed
1-inch piece of ginger, sliced
1 teaspoon cumin seeds
1 teaspoon coriander seeds
4-5 black peppercorns
2-3 cloves
1-2 bay leaves
1 cinnamon stick
2-3 green cardamom pods
1 liter water
Salt to taste

For the Rice:
2 cups basmati rice, soaked for 30 minutes and drained
1 large onion, thinly sliced
1/2 cup yogurt, whisked
2-3 green chilies, slit
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon garam masala powder
1/2 cup fresh coriander leaves, chopped
1/2 cup fresh mint leaves, chopped
3 tablespoons ghee or oil
Salt to taste
Saffron strands soaked in 2 tablespoons warm milk
Fried onions for garnish
