Hammons Black Walnuts: A Wild Luxury That's More Than Squirrel Food

It’s black walnut season. If you’ve ever looked at the green balls kicking around the yard and assumed they’re nothing special you’re missing out on my favorite nut.

Last week I went down to MO to see my friends @black_walnuts, a multi generational, family owned company and essentially the only supplier of black walnuts in the U.S. at scale. It was a bucket list trip.

I love the flavor, but black walnuts are also one of the most relatable wild foods to get people interested in foraging since most are already aware of them. I love harvesting and cracking my own, but I can’t crack enough to serve hundreds of people a year.

What’s really interesting is that so many people, including most chefs I speak to don’t know you can even buy black walnuts, let alone at a reasonable price. Hammons makes it possible for me to share one of my favorite wild ingredients with many more people than I’d be able to otherwise. I’m glad they’re here.
