Hi Folks,

Here is another “what we eat in a week” video so you can see what we eat as vegans; I hope you find it useful and that you get ideas for your vegan journey; and also if you have ideas for our vegan journey.

I had some bananas left from the previous week so I made some banana bread:

Here is the link to the recipe I used, it was very nice, tasty and moist – worth giving it a go. It was also very easy to make. I did find it cooked quicker than the recipe said so worth checking it before the time is up:

The seitan recipe is from Madeleine Olivia, it is extremely easy and very yummy, goes well with mashed potatoes or chips and veg, give it a go, you won’t be disappointed:

How to make spaghetti bolognese for 4

Ingredients:

125g mushrooms
1 tablespoon of sunflower oil
1 small onion.
1 carrot
2 teaspoon garlic granules
1 teaspoon dried thyme
1 tablespoon of tomato puree
1 stock cube with red wine
125g dried red lentils
1 400g tin of chopped tomatoes
1 tablespoon soya sauce
270g pasta

Method:

1. boil up the red lentils and leave to simmer.
2. Fry the mushrooms, onion and grated carrot.
3. Add the garlic granules and thyme to the frying pan.
4. Add the tomato puree, the stock cube, the chopped tomatoes, soya sauce to the frying pan.
5. when lentils are cooked add to the frying pan and stir in.

Serve on pasta.
Grated vegan cheese/parmesan on top – optional.

How to make stir fry.

Ingredients for 4 portions

1 cup of water
1/3 cup of soy sauce
2 teaspoons of dark brown sugar
2 tablespoons of corn flour
2 teaspoons of onion powder
1 teaspoon of rice vinegar
1 teaspoon of lime juice
3 teaspoons of garlic powder
1 teaspoon of grated fresh ginger
¾ teaspoon of turmeric
pinch of black pepper
1 teaspoon of mirin

Method:
Mix all the ingredients together until well blended.

Fry a mixture of vegetables:
onions
mushrooms
sweet corn
pak choi
pepper
mangetout

top with cooked tofu

when vegetables are nearly cooked pour over sauce and continue stirring until well mixed in and cooked

top with tofu (we used the hoisin tofu on the first day and tofoo on the second day)

The smoothie I made:

put all ingredients in a food processor and whizz:

250ml of coconut milk
a banana
1 dessert spoon of mixed seeds
1 dessert spoon of protein powder
some frozen blueberries.

Our mixture of seeds:
and equal portion of
chia seeds
pumpkin seeds
sunflower seeds
hemp seeds
linseed or flaxseed
sesame seeds

Hummus Pasta

Put some dried sundried tomatoes in some hot water to plump up.
Cook enough pasta for each person
Cook a handful of frozen peas per person
Warm up the hummus

When pasta is cooked, stir it all in together and serve.
