If you’ve ever wanted to make authentic Italian tiramisu from scratch, this is the only recipe you’ll need!
In this video, I’ll show you step by step how to make traditional tiramisu, including homemade ladyfingers (savoiardi biscuits) that soak up the coffee perfectly.
This classic dessert is rich, creamy, and incredibly easy to make at home—no store-bought biscuits needed! Whether you’re a tiramisu lover or just looking for an impressive dessert, this recipe is a must-try!
☕️🍦Classic Tiramisu:☕️🍦
Serves 8-10 people
✅✅For the Lady finger biscuits:
✅For the Sponge
4 egg yolks
20 grams caster
2 teaspoons vanilla
150 grams all purpose flour or plain flour
50 grams cornflour / cornstarch
Icing sugar or confectioner's sugar as needed
✅For the Meringue
4 egg whites
1/4th teaspoon salt
90 grams caster sugar
Important Notes:
✅Pipe 3 inch lines on a baking tray lined with parchment paper
✅Dust with icing sugar / confectioner’s sugar twice
✅Bake at 200 Celsius / 400 Fahrenheit for about 8 minutes (in a preheated oven). The sides will have a light golden colour
✅Bake one tray at a time and while one batch bakes, you can keep the rest of the batter in a piping bag or in the mixing bowl covered with a lid or cling wrap on so it doesn't dry out.
✅✅For the Mascarpone Filling:
3 egg whites
1/4th teaspoon salt
100 grams caster sugar
3 egg yolks
1 teaspoon vanilla extract
100 grams caster sugar
400 grams mascarpone
55 grams port wine
Important Notes:
✅Place the yolks, sugar and vanilla mix in a bowl and place this bowl over a saucepan containing simmering water. The water should NOT touch the base of the bowl - the steam will heat the eggs gently.
✅Whip this mix on medium speed for 5 minutes. It will form thick ribbons. Carefully take it off the heat and let it cool down first for 15-20 minutes before mixing with the Mascarpone + port wine mix and whipped egg whites
✅Using alcohol is OPTIONAL
✅if you are using unpasteurised eggs, you can place the egg whites with the sugar from the recipe (100 grams) in a heatproof bowl over a saucepan of gently simmering water and lightly whisk the egg whites till the sugar dissolves and doesn't feel gritty when rubbed between your thumb and index finger. Then you can take it off the heat and continue whisking to stiff peaks. I generally always cook the yolks over a double boiler if using in these types of egg cream recipes even if I am using pasteurised eggs which is why I haven't pasteurised the egg whites
✅✅For the Coffee Soak:
175 grams freshly brewed espresso
55 grams port wine
Or 25 grams rum or brandy
Important Notes:
✅If you don’t have espresso or freshly brewed strong coffee, you can also use instant coffee. Add 2 tablespoons of instant coffee to 175 grams hot water. You can taste and add more coffee if you want it stronger.
✅Wait for the coffee mix to cool down first before soaking the lady finger biscuits
✅Using alcohol is OPTIONAL
✅Let the tiramisu set overnight before dusting with cocoa powder the next day and serving
✅I've used an 8" x 12" dish to assemble the tiramisu
