This is a traditional Chinese Braised Chicken Wings recipe that is super easy to make and perfect as a snack, starter, side dish or party "finger" food.

Ingredients
1. Chicken Wings (1 kg)
2. Brown Sugar / Rock sugar (2-3 tsp)
3. Dark Soy Sauce (1 tbsp)
4. Light Soy Sauce (1 tbsp)
5. Shaoxing Wine (1 tbsp)
6. Ginger (10g)
7. 2 Spring Onions
8. Hoisin Sauce (2 tbsp)
9. Chicken Stock (100-200 ml)
10. Salt, Pepper & Oil

Braising is a very common method of cooking in Chinese households and it is often called "Red Cooking".

The Chicken Wings are lightly fried and then braised in a little liquid with soy sauce, rock sugar, rice wine and sometimes with other spices to achieve a savoury dish with a rich mahogany colour.

Many types of meat and vegetables can be cooked in this way and my red-cooked chicken wing recipe is a traditional recipe except I'm using brown sugar instead of rock sugar as it is more widely available.

Hoisin Sauce is widely available in most large supermarkets but you could also substitute that for oyster sauce.
