Hello out there! Today we are making Seitan by washing flour. Once you master this technique, you will think twice about using the other vital product to make it. Start with 6 cups of flour, I used all purpose in the video but use any wheat flour you like. I find that the store brand works just as good as the pricier products. Add 2 tsp of table salt and stir to combine with a whisk. Add 2 cups of water and stir to combine into a soft dough. Knead the dough for 3 to 5 minutes or until it develops an elastic feel and is no longer sticky. Place the dough back into the mixing bowl. In a separate mixing bowl, combine 3 to 4 tsp of salt into a gallon of cool water until completely dissolved. Place the dough into the salt water and allow to soak for 6 to 8 hours. Make sure the dough is completely submerged into the water.

After the soaking time has passed, use your clean hands and gently squeeze the dough to begin removing the starch from the gluten. The water will get very cloudy and turn white. Continue to gently turn and squeeze the dough under water until the water is saturated with starch and resembles milk. Prepare a second cool water bath and continue rinsing the starch from the gluten. I keep the starch water from these 2 washes and allow the starch to settle in the bottom of the bowl for an hour or so. I just drain the clear water off and the starch can be used for tons of other recipes, my favorite being vegan bacon.

Prepare another bowl with cool water and continue to wash the starch from the gluten. Repeat until the water just becomes cloudy and most of the starch is removed. You will not remove all of the starch using this process. Place the seitan in a cheese cloth and use a strainer to drain off the excess water if you want to refrigerate the dough and use it later. To prepare the seitan, make your favorite flavored broth, For the purposes of this video, I only show you how to wash the flour. I will have more video on making various meat substitutes in the next several weeks. Combine your favorite herbs or vegan broth mixture. Heat to simmering, not boiling. Place the dough into the broth and simmer for at least an hour. Remove from the broth and serve or you might opt to coat with your favorite rub or sauce and bake in the oven. Seitan is very similar to meat so you can batter fry it, saute it, roast, etc. More to come in the next several videos. I really wanted to focus on the technique with this video.
