Spring rolls are a popular and delicious appetizer originating from Asian cuisine. They consist of thin rice paper wrappers filled with a variety of ingredients such as vegetables, shrimp, chicken, or tofu, along with fresh herbs like mint, cilantro, and basil. These ingredients are often complemented with rice noodles and served with a flavorful dipping sauce, such as peanut sauce or sweet chili sauce. The spring rolls are typically rolled tightly, sealing in the fillings, and can be enjoyed either fresh or fried until crispy. With their crunchy texture and vibrant flavors, spring rolls are a delightful and versatile dish that is perfect for any occasion.

Chicken Springrolls Recipe:

INGREDIENTS:
- 1 kg minced chicken
- 1/2 cup cooking oil
- 1 full tsp tomato paste
- 1 onion
- 6 cloves of chopped garlic
- 2 bay leaves
- 1 chickenbouillon cube
- Red pepper to taste (option)
- 1 tbsp kentjoer powder
- 1 tbsp laos powder
- 1 tsp black pepper
- 1 tsp adjinomotto
- Salt to taste
- 500 gr fine peas
- 1 package of spring roll sheets


Preparation Method:

Step 1: Preparing the filling

Heat 1/2 cup of cooking oil in a pan. Slice the onions into thin half-moonsand and chop the garlic. Add bay leaves and chickenbouillon cube. Fry the onions until light brown.


Step 2: Preparing the chicken.

Wash the minced chicken with lemon juice and brown it with hot water. (This helps to cook the ground meat and remove any remaining impurities)
Add the minced chicken to the pan. Mix everything well and make sure there are no lumps remaining. Add tomato paste. Mix and fry everything well until you see the color change. Add all the spices and salt to taste (be careful with the salt). Add 500 gr fine peas. Mix everything together well and let it simmer over medium-low heat until the liquid is absorbed. Transfer the filling to a dish and let it cool down.


Step 3: Roll the Chicken Spring rolls.

Use the spring roll sheets of the desired size and fill them with the filling.

1. Place a spring roll wrapper on a clean surface, with one corner pointing towards you.
2. Place a portion of the filling horizontally across the bottom third of the wrapper, leaving some space on each side.
3. Fold the bottom corner over the filling, tucking it in snugly.
4. Fold the left and right sides of the wrapper towards the center, creating a sort of envelope around the filling.
5. Roll the wrapper tightly upwards, starting from the bottom, until you reach the top corner.
6. Before completely sealing, moisten the top corner with a bit of water to help seal the spring roll.
7. Continue rolling until the spring roll is tightly sealed.

Repeat the process with the remaining wrappers and filling.


Step 4: Frying the Springrolls

Use clean oil. Heat the oil to 180-190 degrees Celsius and fry the spring rolls until golden brown.
