Since there's not much tutorial regarding air refueling with Orbiting Tanker, I have summed up a few tips that have helped me along the way.

1.) Keep my eye on the velocity vector while looking at the sight picture of the tanker with my peripheral vision
2.) Try to keep my speed +2/-2 with the tanker's speed. If you accelerate too much (plane pitch up) or decelerate too much (plane pitch down) it makes it hard to keep your altitude with the tanker
3.) EXTREME small movement of the stick (I often just touch it and let go of the stick)
4.) Anticipate pitch, roll and speed way ahead (you have to start throttling up way before your plane even starts to fall behind the tanker)
5.) DO NOT grip your stick (You have to constantly remind yourself to relax your hand, and sometimes after making a small adjustment I literally let go of the stick)
6.) As everyone else suggest, if you start wobbling due to PIO (Pilot Induced Oscillation), the best is to just neutralize your stick, slow down and re-approach the Tanker.
7.) Be patient and be super slow (meaning pitching up, rolling or even speeding up or slowing down with the tanker) Do not think about instant correction, it's better to make small adjustment and let the plane slowly approach at the correct attitude.
8.) Lastly, your throttle should be in constant movement (continuously throttling up and down within a small range)
