Wondering what a vegan in New York City eats during lockdown? This video provides simple and nutritious plant-based recipe ideas for those new to the lifestyle or familiar with eating vegan!

Breakfast: Chocolate Waffles
- 1 C oats, ground into flour
- 1 T cacao powder
- 1 T sweetener (i use granulated monk fruit)
- 1 t maca powder
- cinnamon, cardamom, cloves
- 1/4 C pumpkin puree
- 1/3 C plant milk
- dash of maple syrup (i used sugar-free)
(combine + cook according to your waffle iron)
- banana
- strawberries
- sunflower seed butter
- coconut shreds
- maple syrup (i used sugar-free)

Lunch: Salad with Avocado Dressing
- greens
- dressing: guacamole + miso paste + ginger + hot sauce
- japanese sweet potatoes
- adzuki beans
- ginger carrots
- hemp seeds
- seasonings

Dinner: Peanut Butter Plantain Pad Thai (recipe video)
