Kerala Beef Cutlet is a popular snack in Kerala Cuisine. A cutlet is a palm sized deep fried patty with a filling coated in breadcrumbs. The filling is usually made with meat, fish or vegetables. Kerala Beef Cutlet serves as a great snack, an appetizer and even as an enjoyable side dish with rice. It's delicious with crispy outer crust, spongy soft filling and the spicy, peppery, meaty, overload of flavors. Depending on the country and culture, people would call it Croquettes, Cutlets, Patties or Kotleti. Among christian families in Kerala, this cutlet is a main dish of their festivals. They go great with some spicy ketchup and, of course, are just as perfect on its own. Here I have shown a well detailed recipe of Kerala Beef Cutlet without using bread crumbs. This is the way we make cutlets here in Thrissur especially in festivals and celebrations. This beef cutlet is a very tasty, protein rich snack especially good for growing kids. You can make this filing ahead and freeze for later use.

ചേരുവകൾ:-
ബീഫ്                   - 250 ഗ്രാം
മഞ്ഞള്‍പൊടി - ½ ടീസ്പൂണ്‍
ഉപ്പ് - പാകത്തിന്
മുളകുപൊടി     - 1 ടീസ്പൂണ്‍
വെള്ളം               - ആവശ്യത്തിന്
ഉരുളക്കിഴങ്ങ്           - 200 ഗ്രാം
വെളിച്ചെണ്ണ - ആവശ്യത്തിന്        
സവാള അരിഞ്ഞത്    - 1 എണ്ണം
ഇഞ്ചി അരിഞ്ഞത് - 1 ടീസ്പൂണ്‍
വെളുത്തുള്ളി അരിഞ്ഞത്  - 1 ടീസ്പൂണ്‍
പച്ചമുളക്അരിഞ്ഞത്   - 2 എണ്ണം
കുരുമുളക് പൊടി      -  ½ ടീസ്പൂണ്‍
ഗരം മസാല       - 1 ടീസ്പൂണ്‍
വേപ്പില - 2 തണ്ട്
മുട്ട - 2 എണ്ണം

Recipe notes:-
• Ensure cutlets are evenly shaped without cracks and fried at the right temperature.
• Avoid overcrowding the pan when frying.
