In todays video we made ‘Ris a la mande’ which is a traditional Danish rice pudding I grew up with. We would always eat it on Christmas Eve and I am super excited to share it with you but in a healthier and more compatible option for anyone who may be doing a keto or high fat low carb diet.

Recipe: Serves 6

125 grams arborio rice
1 dl. water
8 dl whole milk
2 dl heavy cream

75 grams chopped and peeled almonds
2.5 dl of heavy cream
75 grams of keto friendly sweetener
1 teaspoon of vanilla extract

Optional:
Cherry topping if desired. Could use pie filling or just fresh strawberries.

Bring the water to a boil and add the rice. Let simmer for a couple of minutes. Then add the whole milk and heavy cream and bring to a mild boil. Keep stirring until mixture thickens. Takes about 30 minuets to 45 minutes. Once thick take off the heat and place in the refrigerator until cooled.

In the mean time place the almonds in a bowl covered with water and microwave for 2 minutes. Once cool enough to touch squeeze the almonds in your hand to take off the shell and chop the almond to your desired thickness but leave one almond whole.

Then take the remaining heavy cream and mix it until it becomes think. Then add your sweetener of choice and vanilla extract and mix until thickened.

Once rice portion of pudding has cooled you fold it into the whip cream mixture and then fold in the almonds.

Serve cold with cherry topping if desired or just as is.
