Celebrate Mid-Autumn Festival with “Purple Sweet Potato & Coconut Snowskin Mooncakes”! 🥮 This year, I wanted to make a healthier mooncake, so I opted for purple sweet potatoes! 🍠 Their vibrant purple color is so gorgeous, and since they’re naturally sweetened, I didn’t add any sugar aside from sweetened condensed milk. Also, instead of using neutral oil, I substituted it with coconut oil and added coconut milk to amplify the coconut flavor, which paired really well with the sweet potato. ☺️ I hope you enjoy this recipe! For those who aren’t familiar with the Mid-Autumn Festival, this is a popular Chinese holiday that falls on the 15th day of the 8th month on the lunar calendar when the moon is at its fullest 🌕. The history of this festival dates back over 3,000 years to thank the gods and the moon for a good harvest. To celebrate, families reunite and enjoy a big feast together (similar to Thanksgiving in the United States). Lanterns are lit up to symbolize prosperity, and mooncakes are eaten to honor the moon. 🥮

Japanese Purple Sweet Potatoes - about 4 small to medium sized (400g)
Water - 1/4 cup (59g)
Coconut Milk - 3/4 cup (171g)
Condensed Milk - 1/4 cup (76g)
Coconut Oil - 4 tbsp (57.2g) + 1.5 tbsp (21.4g) when cooking

💗Storage: they are best eaten fresh! But you can store them in the refrigerator in an airtight container up to a week. When you’re ready to eat, take then out to thaw in room temperature for 20 mins or until they have soften.
