Mercer Renaissance 6" Flexible Boning Knife Mini Review

The Mercer Renaissance line represents extremely high value for those looking to get their first good knife. It's fully forged in Taiwan with very good fit and finish. It has decent cutting geometry for a boning knife and is a great choice for a boning knife that can take care of chickens with ease. Note that the grip is comfortable but moderately slippery when it's covered in chicken juices.
