Baby Jackfruit curry is among the most popular curries in Sri Lanka. Jackfruit has all kinds of vitamins and minerals and there are lots of health benefits of eating them. In Sri Lanka, Baby Jackfruit curry / young jackfruit curry/ green jack fruit curry/polos curry/pollos curry is a very popular meat alternative.

Ingredients
• Canned Baby/Young Green Jackfruit 280g (Sri Lankan name Polos)
• Coconut Oil/Cooking Oil 1 Tbsp
• Garcinia Cambodia 2 pieces/Tamarind 2 tsp
• Cinnamon Stick 1 inch
• Salt 1 tsp
• Turmeric powder ¼ tsp
• Sri Lankan Curry Powder 1 tsp
• Sri Lankan Chilli Powder 1 ½ tsp
• Thick coconut milk 1 cup (4 Tbsp of rich coconut milk + water)
• Light coconut milk 1 cup (2 Tbsp of rich coconut milk + water)
• Ginger Garlic Paste 1 Tbsp (Crushed 4 Cloves of Garlic + 1-inch size Ginger)
• Red Onion ¼ or 4 small red shallots
• Green chillies 2
• Curry Leaves 2 Stems (Dried Curry Leaves 1 Tbsp)
• Lemon Grass ¼ inch piece (Optional and not part of the authentic recipe, so don't use if you are after only the authentic flavour)
