Vegan Caramel Sponge Cake (okara recipes)

This is yet another delicious way to use up your leftover okara (soy pulp) - make a yummy Vegan Caramel Sponge Cake!

Vegan Caramel Sponge Cake (with okara)

DRY:
1 cup wholegrain spelt or wheat flour (or use gluten free mix if needed)
1/2 cup cornstarch
1 1/2 cup unrefined cane sugar (panela or rapadura, or you can also use coconut sugar)
1/2 tsp salt
1 Tbsp baking powder

WET:
1 1/2 cup fresh cooked okara
1/3 cup unsweetened vegan yogurt (I was using coconut, but you can use soy too)
3/4 cup nut butter of choice (I used peanut butter)
1/4 to 1/2 cup plant milk

Pour into a cake tin (20cm) and bake for 50 minutes at 175 degrees Celcius (bake for 25-30 minutes if splitting the batter between two tins).

VEGAN CARAMEL:
1 cup coconut cream (from the top of coconut milk tin)
4 Tbsp unrefined cane sugar (or use coconut sugar)
1 tsp vanilla essence
