RECIPE
INGREDIENTS
1, Whole Chicken (broken down into Breasts, Thighs, Wings, Drumsticks)
1 cup, Buttermilk
2 Limes
4 Cloves Garlic, finely grated
1 inch of Ginger, finely grated
2 tbsp, Garam Masala
2 cups, All Purpose Flour
1/2 tbsp, Dry Ginger Powder
1/2 tbsp, Ground Red Chili (Cayenne)
1/2 tsp, Ground Nutmeg
1/2 tbsp, Crushed Methi (Fenugreek) Leaves
2 tbsp, Salt
5 cups, Neutral Oil (Canola, Vegetable, Grapeseed)
1/2 tsp, Powdered Red Food Colour (Optional)
METHOD
Combine Chicken, buttermilk, juice of 1 lime, garlic, ginger, and 1 tbsp of garam masala, and 1 tbsp salt, and ¼ tsp of red food colour in a large bowl. Massage, ensuring every piece is coated. Cover and refrigerate overnight or a minimum of 3 hours.
In a large resealable plastic bag, add flour, 1 tbsp garam masala, ginger powder, ground red chili, nutmeg, fenugreek leaves, 1 tbsp salt, and ¼ tsp red food colour. Seal, and shake to mix ingredients.
Remove chicken pieces from buttermilk mixture, and add one at a time to flour, shaking to coat. Set aside.
Heat oil in a large dutch oven to 350 degrees. Add coated chicken, ensuring not to crowd the pot.
Fry chicken until golden brown on all sides, and juices run clear (approximately 15 minutes). Transfer to a wire rack and allow to slightly cool before serving. Enjoy! :)
