RECIPE

150 g or 5 ounces hard cheese (cheddar cheese for example)
Salt

1. Cut your cheese into squares 1x1 cm (ca 1/3 inch) squares. I am using a cheese cutter, but you can just use a regular knife. The thickness should be ca 5 mm (0.2 inches).
2. Place them on a baking tray lined with parchment paper. Let the pieces dry for minimum 24 h (preferably 48h).
3. When the cheese looks "sweaty" it is ready to be popped.
4. Bake the cheese on 250 C (480 F) close to the top for 1-2 minutes (or until they pop).
5. Keep a CLOSE eye on them so they don't burn.
6. Take out, salt when hot, and let cool properly before you dig in.

PS: different kinds of cheese give different results :-)

PS 2: If you don't let the cheese dry out, chances are it will simply melt into a puddle.
