Super easy CARNE ASADA BURRITO BOWLS w/ Homemade Chimichurri Sauce. The flavors are INSANE. My favorite part is this Chimichurri sauce, so epic and way better than store bought since I put olive oil, a wayyy healthier oil.

Carne Asada
1-2 cups OJ (enough to cover the meat in a small container)
1 tsp salt
1 tsp black pepper
1 tbsp garlic powder
1 tsp cumin
1 tbsp olive oil
*best to marinate it for at least 8 hours or overnight to get the meat tender
*sear on medium high heat in large skillet for 3-4 minutes on each side, will be cooked more medium

Rice:
2 cups Jasmine rice (washed enough until the water is almost clear)
Fill water to 2 cup line (rice cooker)
1/4 cup finely chopped cilantro
1/2 lime juice
1 tsp salt
2-4 garlic cloves, pressed
1 tbsp olive oil
*cook on plain rice setting when using rice cooker

Pico de Gallo (super simple):
Finely diced tomatoes
1/4 tsp salt
1/4 cup or less (depending if you’re not a crazy onion fan) of white or yellow finely chopped onion

Chimichurri Sauce:
1/2 cup finely chopped cilantro
1 Serrano pepper, finely chopped (optional to leave seeds in, the more seeds the spicier it is)
1 tsp salt
1 tsp black pepper
1/4 red wine vinegar
1/2 lime juice
1/2 cup olive oil (can add more in small increments if it’s too vinegar tasting for you)
1 tsp red crushed pepper (optional)
2 small garlic cloves, pressed

Add mashed avo with lime
