Ingredients
• 50g Barley
• 100g Peas
• 200g Potatoes
• 200g Carrots
• 150g Bacon (pre-cooked weight)
• 2.5 liters of Stock (I used Chicken Stock but you can use Beef Stock for a more historically accurate flavour)
• Salt
• Pepper
• 1 Tbsp of Malt Vinegar (optional)

Steps
• Cut the potatoes and carrots into cubes.
• Place the barley, split peas, potatoes, carrots, stock and malt vinegar and bring it to a boil. Once the pot comes to a rolling boil, bring the heat down and simmer for 2 hours. Stir your soup every 15 minutes and add more stock or water if you find the soup has dried out too much.
• 15 minutes before your soup is done, fry your bacon until crispy.
• Chop the cooked bacon into small pieces and stir it into the soup. As an optional step, you can add the bacon grease into the soup.
• Serve hot.

The Date/Year and Region: Bavaria, circa 1800

Benjamin Thompson
Born in 1753, Benjamin Thompson was a British Officer who was originally born in America. Having betrayed America to the British during the American War of Independence, he was awarded a title of nobility when he returned to England in 1782.

He later found himself in Bavaria where he was hired to conduct reforms on both the military and the social system and was rewarded for his efforts by being made an Imperial Count in 1792 where he became known as Count Rumford.

Tasked with solving the beggar problem in Munich, he rounded up the poor who he referred to as “detestable vermin” and set them to work in workhouses. With the goal to provide maximum nutrition at minimum cost, Count Rumford served a soup containing ingredients such as barley, peas, sour beer, and bread, and this became known as the Rumford Soup.

While the soups served can be criticise to be spartan and insufficient to meet the daily nutritional needs of the poor, and was also used as a form of control as the workers can be denied the soup as a form of punishment, Count Rumford’s establishment of an industrialised kitchen to serve food to the poor laid the foundation for the concept of a soup kitchen which eventually spread across Europe where soup was served on a more philanthropic basis.

This recipe for Rumford soup is based off a variation published in Warsaw in the earlier 1840s and shared on thefoodcompany.co.uk and is more generous than the original recipe as it contains meat.
