TRUE Gem Found! BBQ Shop - Rolling Smoke in Black Diamond, WA

We went to a campground in kanaskat-Palmer State Park in WA . On the way, we stopped by this local BBQ shop to get “some” food for dinner. Ordered just 5 items but turned out to be about 5 lbs of meat lol. We tried a variety of well established BBQ places in WA, but this place was the best so far in PNW. They do beef ribs on Fridays but their supplier didn’t have one when we visited. Next time! They open at 3pm and we were there at 3:30pm. We highly recommend this place and if you do, be there early before things get sold out!
Staff members were so friendly and the inside of the shop had a lot of seating. Nicely AC-ed. The curved wooden tables were really cool. We did carry out, but the meat stayed really warm for a long time. This is a must try hidden gem. We can’t wait to go back there!

What we ordered:
-Pork Sausage: By far, the best sausage we’ve had from a BBQ shop. Chewy casing, flavorful and juicy inside, this amazing sausage was just $5 per sausage. We should have gotten two of those!
-Burnt Bits: Pork belly soaked in a tangy teriyaki like BBQ sauce. Fruity scent and perfect balance of fat and meat. Crazy good stuff.
-Pulled Pork: Only ordered ½ lb but turned out to be A LOT of food!! The meat itself had so much flavor and was not overpowered by the sauce. Not greasy at all. Wonderful smoke flavor and good quality of meat.
-Beef Brisket: Again, we ordered only 1 lb of meat and they gave us SO MUCH meat! Delicious as is, and perfect for sandwiches.
-A Rack of Pork Ribs: I’m glad we ordered a whole rack instead of just half. The long rib part was chewy and flavorful, the short rib part was soft and savory. We loved both ends!
