Miso Mustard Dressing from Chef Cynthia Louise

This delightful dressing is wonderful on fresh cut cucumber and rocket leaves. It stores really well up to 7-10 days. The dijon mustard plays a part in the bite of this dressing.

Ingredients:
1/4 cup unpasteurized miso paste
1/4 cup dijon mustard
1/2 cup water
1/2 cup olive oil
2 teaspoons lime juice
2 tablespoons maple syrup
pinch of salt and pepper

Method:
Combine all ingredients in a blender and blend until creamy and smooth. Store in a glass jar
