In this video, I show you exactly how to make Hatch Chile Compound Butter — a rich, smoky, and flavorful butter that melts perfectly over grilled steak, veggies, potatoes, corn, and even pasta. Whether you're firing up the grill or just want to take your weeknight meals to the next level, this is a recipe you'll come back to all season long.
🔪 Ingredients:
1 stick (½ cup) unsalted butter, softened
2 roasted Hatch chiles, peeled, seeded, finely chopped
1 small garlic clove, minced
Zest of ½ lime or lemon
½ tsp kosher salt
Optional: 1 tbsp chopped cilantro or parsley
🔥 Use this on:
NY strip steak
Grilled corn
Roasted veggies
Bread or toast
Pasta, potatoes, and more
Instructions:
Roast Hatch chiles on your @charbroilgrills or under the broiler until charred. Let steam in a covered bowl for 5 minutes, then peel, seed, and chop.
In a bowl, mash together softened butter, chopped chiles, garlic, lime zest, salt, and herbs (if using) until well combined.
Spoon onto plastic wrap or parchment, form into a log, and chill until firm.
Slice and place on a hot steak right after grilling. Let it melt in. Done.
