Learn how to make ciabatta bread with biga. Biga is prefermented for 12 - 16 hours before you make your dough (similar to a sourdough starter). Ciabatta is a flat rectangular bread with an open crumb (holes in the middle).

RECIPE

Ciabatta with Biga (from Bread Baking for Beginners by Bonnie Ohara)

Biga

200 g All Purpose Flour = 1 1/4 cups
160 g Water (about 95 degrees F) = 2/3 cup = 5 2/3 fl oz
1/4 tsp Yeast

Ciabatta

1000 g All Purpose Flour = 6 1/2 cups
800 g Water (about 95 degrees F) = 3 1/3 cups = 28 1/4 fl oz
4 g Yeast = 3/4 tsp
20 g Salt = 2 tsp

CIABATTA W/ BIGA RECIPE

Measure and Mix Biga ingredients 12-16 hours before you want to start your ciabatta dough. Let it sit until you're ready to start the ciabatta dough.

Add pre-fermented biga to the ciabatta ingredients

Mix

Let dough rest for about 20 mins

Fold dough by folding the top down on top of the bottom and giving the bowl a quarter turn. Repeat until the dough forms a tight ball (2 - 3 times around the "clock")

Let dough rise 1 hour. Then, fold the dough again (2-3 times "around the clock")

Continue to let rise for 1 more hour.

Carefully take dough out and place it on a floured countertop

Flatten the dough into a rough rectangle. Divide the dough into 4 pieces.

Preheat the oven to 475 F and let the ciabatta loaf pieces proof for another hour.

Place the ciabatta loaf pieces onto a baking sheet. Put a roasting pan (not glass!) into the oven and add a thin layer of water to it (or some ice cubes) to create steam. Bake for 15 minutes with the steam. Then, take the steam pan out and bake for an additional 5 minutes.

Remove from the oven, and let cool on a cooling rack for at least 30 minutes.
