In this episode of OTK (Out The Kitchen), I visit Palms and Patties — a new hidden gem in Santa Monica serving up clean, seed oil-free smashburgers made with organic grass-fed beef and house-made aioli.

I ordered the Double Grilled Smash with grilled onions, American cheese, pickles, and their signature Pn’P sauce — plus beef tallow fries loaded with cheese and onions. Every detail, down to the reverse-toasted bun, felt intentional.

What I didn’t expect was meeting the owner, Browsten — who was not only flipping patties but shooting his own product photos out front. He shared his mission to build a better burger for people who love them as much as he does, without compromising on ingredients or flavor.

This is what OTK is all about: stepping out of my own kitchen, into someone else’s passion, and finding inspiration in the hustle behind the food.
