Grandma Eleni's Pashalina Koulourakia (Greek Easter Cookies) recipe (English subs)

Pashalina Koulourakia (Greek Easter Cookies), also called Tsourekakia in the island of Crete, are the fluffiest and crunchiest cookies you will ever taste. You will hardly ever find a home in Greece during Greek Easter that will not have a few (or usually a lot) of them ready to treat guests and children alike.

The main recipe does not vary too much throughout Greece, but this particular one is from Grandma Eleni, a family member of a member of the Greekosophy family.

INGREDIENTS (for about 180 cookies)
600gr butter
2kg soft flour (baking flour)
700gr white sugar
1 large glass undiluted evaporated milk
6 eggs plus 1 more for glazing
12gr vanilla powder or vanilla extract
30gr baker's ammonia (ammonium carbonate)
1 tsp baking powder
