Japchae is a traditional Korean stir fry noodle dish made with an array of fresh vegetables and potato starch glass noodles. This dish is not only healthy, but also can be easily tweaked to make the dish gluten free and/or vegetarian. Japchae is super easy to make and surprisingly light. I hope you enjoy making this dish with me.

8.8oz / 200g sweet potato starch noodles (dangmeun)
3.5oz / 100g rib eye fillet (optional - can remove if vegetarian)
1/2 lb / 200g carrot
1/2 lb / 200g spinach
1/3 lb / 130g onion
1/5 lb / 100g fresh shitake mushrooms (can use any variety)
3 cloves / 20g garlic
2 tsp cooking oil
3 Tbsp + 1 tsp soy sauce (can replace with tamari if gluten free)
5 tsp sesame oil
2 Tbsp + 1 tsp sugar
1 tsp mirin (optional)
