Ancient Grains Revival: A Farmer's Mission to Preserve Diversity

Dedicated to preserving ancient grain varieties, a farmer collaborates with the Kusa Seed Foundation to cultivate and maintain old, traditional types of wheat such as einkorn and emmer. This endeavor not only aims to safeguard the genetic diversity of these crops but also to revive their cultivation for their unique nutritional values and flavors.

Anthony Boutard, of Ayers Creek Farm, shows us some of the ancient grains (wheat) that he grows on his organic farm.
