Fresh Pasta Dough Recipe

Ingredients:
• 2 cups all-purpose flour
• 2 whole eggs
• 2 egg yolks (plus more if needed)
• all-purpose flour for dusting
• 1/8 tsp salt
• 1 Tbsp oil

Procedure:
1. Mound the flour on a flat surface and dig a hole at the center of the mound.
2. In a bowl, combine all the eggs and egg yolks, salt and the oil. Beat the mixture and begin to incorporate to the flour by placing the mixture carefully into the center of the well.
3. Mix the flour and the egg mixture with a fork starting at the center of the well going to the sides. The dough will start to come together in a shaggy mass when about half of the flour is incorporated.
4. Use your hands to continue mix the dough. Press any loose bits of flour into the mass of dough. If needed, add another egg yolk or a tablespoon of water.
5. Knead the dough by pushing it down and away from you and turning it repeatedly until the dough feels smooth. This usually takes 7-10 minutes.
6. Shape the dough into a ball by rolling it in a circle with both hands, applying pressure to the bottom so that the dough tucks under itself and the ball tightens up a little.
7. Cover the dough or wrap with a plastic cling wrap and let it rest for 30 minutes.
8. After 30 minutes, place the dough on a lightly floured surface. Continue kneading for 5 minutes or until smooth and elastic. Add more flour if necessary to prevent sticking.
9. Cover the dough again and let it rest for 15 minutes.
10. After 15 minutes, unwrap/uncover again and place on a lightly floured surface.
11. Using a lightly floured rolling pin, roll out the dough into 1/8 inch thick circle while gently picking up the dough with both hands. Check for places where the dough is too thick. Even out any thick spots. Let it rest until the dough is slightly dry but can be handled without breaking. Lightly flour the dough circle and roll loosely on rolling pin.
12. When the dough has flattened into the desired thickness, prepare to fold the pasta by adding flour to the surface of the dough before folding. This will prevent the dough from sticking during cutting.
13. Start cutting into your desired shape. If you want evenly thick pasta, you can use pasta roller if available. This will make about 500 g of pasta
14. Toss the noodles with a little flour to keep them from sticking and gather them into a loose basket while preparing your ingredients for the Pinoy Style Chunky Pasta.


Pinoy Style Chunky Pasta

Ingredients:

• 500g pasta
• 4 cloves garlic, minced
• 1 onion, chopped
• 2 pcs. green bell pepper, cubed
• 250g ham, cubed
• 250g cheese dogs
• 1 small can button mushrooms
• 2 cups pinoy style tomato sauce or spaghetti sauce
• ½ cup banana ketchup
• 2 tsps. salt
• 1 tsp. ground black pepper
• oil for sautéing
• grated cheese for topping

Procedure:

1. Start by preparing, peeling and cutting all your ingredients.
2. Cook the fresh pasta by boiling with a lot of water with a little bit of salt.
3. Boil the pasta for 7-10 minutes or until the pasta becomes al dente or has a chewy texture. Drain the pasta and set aside until the sauce is ready.
4. Before cooking the sauce, fry first the ham and hotdogs. This will prevent the hams and hotdogs to get mashed when the pasta is added.
5. Sauté garlic, onion, green bell pepper and the button mushrooms. Add salt and pepper to taste.
6. Add the cooked ham and cheese dogs and the rest of the ingredients for the sauce. You can adjust the spices according to your preference. You can also add chili powder, basil or other spices.
7. You can also add ground meat and sugar for a sweeter sauce.
8. Finally add the cooked pasta and work fast just until the pasta blends well with the sauce and remove from heat immediately.
9. Serve and enjoy!
