Ingredients 配料 :
500g Stingray 500克 魔鬼鱼
100g Salted vegetables 100克 咸菜
20g Ginger, minced 20克 姜, 切碎
3 Garlic, minced 3粒 蒜头, 切碎
2 Chilli, minced 2条 辣椒, 切碎
1 Tomato, pieces 1粒 番茄, 切块
Seasonings 调味料 :
1 tablespoon Light soy sauce 1汤匙 酱清
¼ teaspoon Sugar ¼茶匙 糖

2) 回锅肉 Twice Cooked Pork

Ingredients 配料 :
500g Pork belly 500克 三层肉
3 slices Ginger 3片姜
2 stalks Spring onion 2颗 青葱
1 tablespoon HuaDiao wine 1汤匙 花雕酒

15g Ginger, minced 15克 姜, 切碎
4 Garlic, minced 4粒 蒜头, 切碎
1 Chilli, sliced 1条 辣椒, 切片
1 Green capsicum, pieces 1粒 青灯笼椒，
2 stalks Spring onion, pieces 2颗 青葱，

甜面酱：
150ml Water 150毫升 水
1½ tablespoon Light soy sauce 1½汤匙 酱清
1 tablespoon Dark soy sauce 1汤匙 酱油
1 tablespoon Oyster sauce 1汤匙 蚝油
1½ tablespoon Sugar 1½汤匙 糖
15g Plain flour 15克 面粉

Seasonings 调味料 :
1 tablespoon Soy bean paste 1汤匙 豆瓣酱
1 tablespoon Sweetened soybean paste 1汤匙 甜面酱
1 tablespoon Light soy sauce 1汤匙 酱清
1 teaspoon HuaDiao wine 1茶匙 花雕
